Lunch has always been a huge challenge for me. I’m the type of person that calls a few cups of coffee a solid breakfast plan, and uses pinterest to find decent dinner recipes, but lunch??? Lunch is hard. More than a few times I’ve just made myself a PB&J right along with the kids because it takes less mental energy to do that than it does to figure out a good adult lunch option.
Now that both kids are in school every day during lunch, I’m back to needing to figure out a better plan for myself.
Thankfully, it didn’t take too long for me to find something I LOVE that doesn’t require spending all afternoon in the kitchen. I was in Walmart and found this entire section of Tai Pei® single serve entrees. The colors caught my eye in the freezer section right away, but when I realized that it was a whole line of different Asian style foods I knew this was what I’d been looking for. These work for home lunches, but since all they need to “cook” is a microwave, they are easy to take in to work, or even to a friend’s house for a potluck afternoon playdate! After spending almost 3 years living in Asia as a teen, I always want more rice in my life. Having good rice in an easy freezer meal is like a dream come true! The way the packaging is set up, it actually steams in the microwave so you end up with soft, fluffy rice, the way it should be! The selection is HUGE so you’ll be set for lunch all week long too. Flavors include: Beef & Broccoli, Shrimp Fried Rice, Sweet & Sour Chicken, Chicken Fried Rice (photographed above), Chicken Chow Mein, and General Tso’s Chicken. I had a hard time deciding what to try first, but this chicken fried rice did not disappoint. As a working mom, this was EXACTLY what I needed to make it through the middle of the day slump. No more wasting time in the kitchen deciding what to eat. Just grab a few entrees the next time you are at Walmart and stock up your freezer!
Then your only decision is which one to treat yourself with first!
You can totally take it beyond lunch too. If your family has very different ideas about what type of dinner they want, this is an easy way to customize each person’s meal to them! The kids can have Sweet & Sour Chicken, while Dad enjoys some Shrimp Fried Rice and you enjoy the delicious Beef & Broccoli meal! Everyone gets what they want and it’s a quick, easy meal with practically no dishes to clean up afterwards. Win-Win-WIN!!!
