Every Sunday we all gather at my mother-in-law’s house for lunch and lots of playtime for the kids. It’s a fun little tradition that everyone looks forward to throughout the week. The kids get QUITE upset if it doesn’t happen because some one is sick or out of town. In fact, they don’t even call Sunday, Sunday anymore. It’s straight-up grandma-day.
This week I whipped up a batch of Lemon Friendship Cookies to bring them over for lunch. Knowing full well my sister in law HATES cottage cheese, I loaded them up with half a pound of the stuff, because Friendship Dairies cottage cheese had issued me the challenge to make a recipe with cottage cheese, that the average cottage cheese hater, would actually enjoy!

One thing that’s AWESOME about cooking with Friendship Dairies cottage cheese is that it is thicker and creamier than other brands, this means it holds up better in recipes (and is even better straight if you are a person who loves cottage cheese & fruit!). You also get up to 15 extra grams of protein PER SERVING!!!
Ready to try out tasty cookie recipe?
- 2 sticks of butter (melted)
- 1 and a half cups of sugar
- 4 teaspoons cream of tartar
- 2 teaspoons baking soda
- Half teaspoon salt
- 5 cups flour
- 2 tablespoons milk
- 2 eggs
- 4 teaspoons vanilla or lemon extract (we prefer lemon!)
- 1 pound cottage cheese
Pour melted butter in the bottom of a large bowl and blend with all ingredients except cottage cheese. It will look like this when you are finished blending.
Add cottage cheese and mix. Make balls of the dough and set on a cookie sheet that you have lined with contact paper. Bake for 15 minutes at 350.
I think you could experiement with other flavors! This week, I tried out vanilla and lemon. I am already thinking about trying a peppermint version at Christmastime next year, or trying to incorporate chocolate somehow because chocolate cookies are always the best!
Regardless of the friendship cookie flavor your choose, it’s nice to know that you are getting extra protein from our cookies, and convincing people they really DO like cottage cheese along the way too!
I have to admit, it was pretty fun surprising my sister in law with these cookies made with something she says she hates. But honestly, I’m not typically a cottage cheese fan either, so I was curious to see if I could make something I, myself didn’t mind! It worked… I may or may not have had them for breakfast the next morning.
