Hey! Trine here again! I am super excited for another post here at this great blog and hopefully you will like todays recipe for Lemon cookies!
I made these super yummy cookies some time ago using a recipe I found at my favorite Norwegian Baking Blog, Passion 4 Baking. Hers look way prettier than mine.
Cookies
Ingredients:
- 12 Tbsp (170 g) butter
- 4 Tbsp (60 g) powdered sugar
- grated peel from 2 lemons
- 1 Tbsp lemon juice
- 1 tsp vanilla extract
- 1/8 tsp salt
- 2/3 cup (150 g) flour
- 2 Tbsp (30 g) corn flour
- Food colour (optional)
Instructions:
- Add softened butter, icing sugar and grated lemon peel in a bowl and mix.
- Add the lemon juice and vanilla extract.
- Add the corn flour, flour and salt.
- Mix this together quickly for 1 minute.
- Add food colouring – get creative!
- Pour the mixture in a plastic bag with a tip and splash out small blobs, or you could make pretty roses. Make sure you make small, tall cookies. Mine where to big.
- Bake in oven at 160 C for about 15 minutes.
Lemon curd
Ingredients:
- 30 g butter
- grated peel of 1 lemon
- 1 tbsp lemon juice
- 150 g icing sugar
Instructions:
- Mix all ingredients.
Take one cookie, add the lemon cream using a plastic bag with a tip and add another cookie on top.
Serve with a lovely cup of tea or coffee.
