I am a huge fan of breakfast foods, but I hate cooking first thing in the morning. With that dilemma and the constant desire to save money, I’ve grown to love breakfast for dinner. Or, the eating of breakfast foods at dinner time!
This time, I decided to go with a breakfast burrito. By far the two best things about breakfast are the potatoes and the bacon, which is why I combined those two into my new favorite burrito recipe! I used Simply Potatoes, which added just the right touch since they are fresh, never frozen (you can find them in the refrigerated dairy section). As a mom, I love that it saves me time (no chopping up potatoes or shredding and peeling them) and I can still be confident that what my kids are eating are actually potatoes because simply potatoes are made with real ingredients!
For these yummy breakfast burritos you’ll need:
- Eggs
- Tortillas
- Bacon
- Hash Browns
- Cheese
- Salsa (optional)
To start off, cook the potatoes and the bacon side-by-side on the stove. When these were done, scramble the eggs in the bacon grease. Crumble up a few slices of bacon into the eggs as they cook, along with a handful of shredded cheese. When these are done, heat up your tortillas. Layer a good amount of the potatoes down the middle of each tortilla adding the egg mixture on top. Roll them up and enjoy!
