The sun is shining, summer is here…(well it is where I live…almost) and a cucumber berry blast is where it’s at! I really love summer, ok?! I can feel the swimsuit tan coming on already. And what is more refreshing, during the summer, than a good smoothie? And since swimsuit season is (almost) in full swing, and I have been trying to finally lose that holiday weight, healthy food is on the menu. I made this smoothie last week as a hopeful experiment and I really loved it. As a plus, all of the kids in our family loved it too. Ingredients:
1 ½ cup raspberries
1 cup blueberries
½ of a sliced and seeded cucumber
1 cup of crushed ice
1 tsp of sugar
Instructions:
Slice half of a cucumber into thick slices. Using a spoon, scoop out the seeds in the center.
Put all ingredients into a blender and blend on high until incorporated well.
Serve and enjoy poolside (or anywhere really…I just love that image).

From a swimmer’s perspective, this is a great light option, especially in the summer—but I’d probably pair it with a bit of protein or carbs (like toast, oats, or yogurt alternative) to make it a more complete breakfast for training.
