This is our go-to lazy Saturday breakfast recipe. It’s my husband’s favorite and it’s so easy to put together! Hope you enjoy it as much as we do! :)
German Pancakes
Recipe adapted from my Mom’s kitchen
Ingredients:
6 Tbsp. butter
6 eggs
1 cup milk
1 cup flour
Preheat oven to 450. Put all the butter in a cake pan and place the pan in the preheating oven to melt the butter. In a blender, combine eggs, milk, and flour. Pour the batter over the sizzling butter and bake in the oven for 18 minutes.

I make what we call “Finnish pancakes” 3/4 cup milk and flour, three eggs, dash of vanilla and sprinkle of cinnamon. I bake it in a pie plate (I spray it with cooking spray and melt a tablespoon of butter in it while the oven is preheating) for 20 minutes. Then I sprinkle cinnamon/sugar on the top and bake for another ten minutes. My kids LOVE it.

Never heard of this recipe before here in Germany; but the kids are looking forward to have these “german pancakes” or breakfast next weekend. :-)

I preheat oven to 415 degrees, place a cast iron skillet in oven while it is heating. Mix together and beat very well with a whisk, 1/2 cup AP Flour, 1/2 cup reg Milk, 3 Eggs and 1/2 teaspoon Vanilla Extract.Remove skillet from oven, add 3 tablespoons real Butter, swirl to coat sides of skillet, then pour in batter. Bake for 17 minutes. You can fill with fresh fruits & powdered sugar or fill with savory fillings. YUM!

I have baked this in a 9X13 and also a cast iron skillet……I prefer the cast iron skillet, as it is a heavier pan. This German Pancake will rise very high, but will not overflow. I have filled with scrambled eggs, and topped that with cheese,fresh spinach green onions & tomatoes….Yum! You can also top with strawberries, strawberry syrup, drizzle of chocolate syrup & cool whip as a special after dinner treat. Use your imagination! Such an easy & fast recipe!
