Welcome to summer everyone! Yes I know it’s early…just humor me. I couldn’t be more excited about this coming season, but has anyone else checked the calendar recently? It’s April…already. What has happened?! This year seems to have flown by for me.
Nick and I moved into a new apartment recently so we’ve been getting settled there. It’s a little studio (and it’s the cutest) and the small space has really brought out the worker bee in me for some reason. I’ve been so productive since we moved. For example, I’ve been making breakfast MUCH more often than I used to. I almost never made breakfast before so we’re still only talking, like, 3 times a week…but it’s a big deal for me. So one of the splendid breakfast ideas I’ve had is this spinach, pineapple smoothie. It’s green AND delicious!
Give it a try during your busy mornings like I did, or when you’re finally ready to head out to the pool for the season. Trust me…this one is the bomb.
Ingredients:
- 6 oz orange juice
- 1 banana
- 1 cup cubed pineapple
- 1 tsp sugar
- Juice from 1 lemon
- ½ cup spinach (packed)
- 1 cup crushed ice
Instructions:
Combine all ingredients in a blender and blend on high until spinach leaves are pulverized.
Serve for breakfast, after a workout, by the pool or wherever else you may suddenly feel the need to drink a delicious smoothie. Enjoy!
