Are you looking for something to do with all your Easter and Mother’s Day leftovers? Sometimes it’s the simplest ingredients that make for the most delicious sandwiches.
It’s very likely you have most of these ingredients in your fridge, if not all. Yet sometimes when we’re stuck in a lunch, or even dinner rut, we don’t think to put them all together.
I just love finding hidden gems in the fridge that I can combine to make a delicious sandwich. When I realized we had not only ham, but brie and avocado as well, I knew magic was about to happen.
I usually whip out the panini press for grilled sandwiches, but this one begged to just have lightly toasted bread, along with slices of ham fresh from the skillet. The heat from the two were just enough to make the brie melt into ooey gooey-ness (a technical term).
How to Make Grilled Ham and Brie Sandwich w/Avocado

Ingredients:
- Sourdough or Rye Bread
- Ham (thick cut or spiral sliced is best – any leftover ham you have works great)
- Brie
- Avocado (you could also use this amazing guacamole recipe instead of avocado.)
- Tomato
- Dijon Mustard
Directions:
- Toast the bread so it’s lightly toasted
- Meanwhile, heat a pan to medium heat and give the ham a quick sear on each side
- Cut the rind off the brie, and slice into thick slices
- Slice the tomato and avocado and sprinkle both with salt and black pepper
- When the bread is toasted, spread some dijon mustard on the bottom slice
- Next put the grilled ham on
- Then layer the slices of tomato and avocado
- Spread the brie on the top piece of bread
- Close it up then slice it down the middle
