We get tired of chicken in my house. We aren’t big red-meat eaters so chicken is truly a staple in our diets. In fact when I first started making this pork chops recipe, I told my daughter it was chicken. Luckily at 4 she wasn’t to suspicious. She loved it and asked for seconds. Now that she knows it is pork chops, she asks for this dinner by name!
I like the idea of making the crust from scratch so I can control what goes into the breading. This recipe is really simple and uses just a few ingredients. You can always add your favorite spice to make it your own. While you have the panko breadcrumbs out, serve this with a side of Homemade Mac ‘n Cheese, and Lemony Sauteed Spinach and you’ve got a family dinner made from scratch in under an hour!
Panko Crusted Crunchy Pork Chops Recipe
Ingredients:
1 lb thin cut pork chops
2 cups panko bread crumbs
1 teaspoon black pepper
2 teaspoons garlic powder
1 teaspoon Oregano (optional)
2 eggs
Directions:
- Preheat oven to 350 degrees
- Prepare a baking sheet by covering with foil (nonstick works best!)
- Wash pork chops and set aside
- Crack 2 eggs in a bowl and whisk with fork
- In a large plastic bag, add panko crumbs and seasonings. Close bag and shake to combine
- Place one pork chop into the egg mix and coat well. Lift and allow excess egg to drip back into bowl (to prevent the breading from clumping)
- Place the egg-dipped pork chop in the bag with the breading mixture and shake until well coated.
- Lay pork chop flat on baking sheet
- Repeat until all pork chops are breaded
- Place pan in oven and bake at 350 degrees for about 30 minutes (until the internal temperature reaches a minimum of 145 degrees according to the FDA recommendations)
Remove pan of delicious, crunchy, breaded pork chops from the oven and enjoy! With about 20 minutes prep, you can surely add this to the list of Easy Weeknight Family Meals!
