I have a big confession. I DISLIKE traditional deviled eggs. I remember the first time I was served deviled eggs. I was four and at a home daycare. All of the kids sat around the table and she served us hot dogs and deviled eggs. As everyone else devoured their lunch, my four year old mind could not figure out any sane reason to put pickles in eggs. Every time I see a deviled egg, I flash back to that moment and that same feeling of horror. I think it is about time to take back the deviled eggs and replace pickle relish with bacon. Because BACON and EGGS are BFFs.
Deviled eggs are so versatile. You can serve them for breakfast, as a side dish or as football party finger food. The best part is that you can make them ahead of time. I love make ahead food. I am a busy Mama, and I don’t have time to cook for two straight hours. I get my cooking in with thirty minutes here and there. OK, I occasionally get forty-five minutes when the kids get really interested in play dough or painting. I am so excited to reclaim and rethink deviled eggs. They fit perfectly into our active life.

Bacon and eggs are bffs, but I think they need a sidekick to spice up their long standing duo. As you can guess by the name, the sidekick is Sriracha. Sriracha and bacon have a great thing in common. Sriracha Bacon Stuffed Deviled Eggs
- 12 large eggs, hard boiled
- 8 pieces of Bacon, cooked
- 1/2 cup Mayo
- 2 tsp Garlic Powder
- 1/2 tsp Sriracha
- 1/2 tsp Pepper
- 1/2 tsp Salt
- Dried Parsley for garnish
Cut cooled hard boiled eggs in half and carefully spoon out yolks. I used a plastic toddler spoon to easily remove the yolks without damaging the egg. Chop 6 pieces of bacon and add to egg yolks. With a fork mix egg yolks, bacon, mayo, garlic powder, Sriracha, pepper, and salt. Once combined well add mixture to a piping bag or ziplock bag and clip the end of the bag. Pipe mixture back into egg whites. Chunk 2 pieces of bacon and add a small piece to each deviled egg. Garnish with dried parsley. Refrigerate for at least 1 hour before serving.
