Football season is upon us, which for most people means fun viewing parties or even tailgating. My favorite thing at these parties is always the FOOD. I love snack foods, and getting together with friends.
Today, I’ll be sharing our favorite recipe for nacho cheese rice to put in a layered bean dip with ideas from our sponsor, Minute® Rice.

Rice is one of my all time favorite foods, so I loved that each person at our Minute® Rice football viewing party was given the challenge of creating a tasty recipe with a different Minute® rice product. Some chose the new Minute® Multi-Grain Medley which has a slightly chewy, nutty flavor. Others tried the Minute® Whole Grain Brown Rice which has a rich nutty flavor.
Myself and a couple others used Minute® White Rice which is the original precooked rice. All three flavors are gluten free and non GMO.
My Cheesy Rice Bean Dip starts with Nacho Cheese Rice. The cheesy rice is so simple to make and it works with so many recipes.
Nacho Cheese Rice
- 1 cup Minute® white rice
- 1 can cheese soup
- water
Put the soup in a small saucepan with one can of water. Bring to a light boil.
Add rice to the soup, cover and remove from heat. Let stand 5 minutes. This is why I love Minute Rice. It’s just 5 minutes to tasty, fully rice!!! Fluff it up and add to your favorite recipe OR eat it straight.
Here is where we add it to our bean dip recipe for game day.
Cheesy Rice Bean Dip
- 2 cans refried beans
- Nacho cheese rice (using recipe above)
- 8 oz sour cream
- 1 jar salsa (your choice of spiciness)
- 1/2 pound shredded cheese
Start by spreading the refried beans out in a 13×9 inch pan for your first layer.
Spoon and spread sour cream over the refried beans and add cheesy rice over that.
Pour can of salsa over the rice and sprinkle cheese on top.
If you still have awhile before your party, cover and refrigerate. If your guests are already arriving, simply pull out a bag of chips and serve!
