How better to start your weekend that with a batch of oatmeal chocolate chip cookies. I never understood why oatmeal raisin cookies are such a BIG thing. Every time I got an oatmeal cookie as a kid, I found that some monster had put raisins in it. All I wanted was an oatmeal cookie with chocolate! Well here you go chocolate lovers. An oatmeal cookie with chocolate! I also added some pecans because they are delicious, but you can leave them out if you prefer.

Ingredients
- 1 stick unsalted butter
- 1 cup light brown sugar (or dark brown sugar for a stronger molasses flavor)
- 1/2 cup white sugar
- 2 eggs
- 2 tsp vanilla extract (yes imitation vanilla is fine)
- 1 cup flour
- 1/2 tsp baking soda
- 2 tsp salt
- 3 cups rolled oats (instant oats will make your cookie more dry but they will work)
- 1 cup chopped pecans
- 2 cups semi sweet chocolate chips
Instructions
Preheat oven to 325ºF
In a large mixing bowl, combine softened butter, brown sugar, white sugar and vanilla with a mixer until smooth.
Beat in eggs, then add flour, baking soda and salt.
With a sturdy spoon, stir in the oatmeal, chocolate chips and pecans until evenly distributed.
Roll small spoonfuls of cookie dough onto an ungreased cookie sheet.
Bake for 12 minutes.
Let cookies cool before removing from the cookie sheet.
