Meatball dinner recipe – family favorite

The last few weeks before school starts are some of the most hectic of the entire year. I’ve talked to a lot of moms lately and we’ve all shared the same thought “August is CRAZY!”

It seems we are all trying to squeeze in the last few fun moments of Summer before we’re back to the everyday routine of school and work.

Part of preparing for that routine is, of course, prepping the back to school meal plan. I tried out a new recipe this week and the kids were SO THRILLED with it, I knew I’d have to share it with you.

We started with  Cooked Perfect® Meatballs. These are, of course, perfect for traditional meatball dishes like baked spaghetti or stroganoff. But I wanted to take things a step farther this week and make something unique that would get my kids excited about eating dinner!

Cooked Perfect has several tasty flavors to choose from, like Italian Style, Angus Beef, Homestyle and even a gluten free Italian style!

I grabbed a big bag of the Italian Style Cooked Perfect Meatballs at the store, knowing it would work for several of our family’s favorite meals!

This week I made mini meatball skewers. These are perfect to serve with rice or noodles (our family always likes rice).

To make these mini skewers you’ll need:

  • toothpicks
  • Cooked Perfect® Meatballs
  • bell pepper
  • pineapple

Start by cutting the pineapple and pepper into bite-size pieces. Warm up the meatballs using the method of your choosing. When everything is prepared, you’re ready to start putting the mini skewers together. Stack one meatball and either a pineapple chunk or a bell pepper piece onto each toothpick and serve!

When the kids saw that we were eating “off sticks” they both started squealing and raced to get to the table.

Another huge benefit of this style of serving up dinner in this fashion is that it can easily be customized for every picky member of the family. Serve up the meatballs with a tangy teriyaki sauce for the adults and a sweeter marinara for the kiddos. Our whole family loves the teriyaki option (pictured below) but my kids never turn down ranch or marinara either.

We love being able to customize things so easily. Every mother knows how important it is to have even just ONE meal every one can agree on to serve up after a long and busy day!

Sometimes, taking the extra minute to present the food in a fun and interesting way can make all the difference when it comes to a having a happy meal time.
